Here at Hi Bräu, we’re big believers in showing our work. So when we wanted to better understand how our beef stacks up nutritionally, we called in an expert: Dr. Susan Duckett, a nationally respected meat scientist at Clemson University.


We submitted samples of our grass-fed beef for nutrition testing, and the results had us doing a happy dance in the pasture.

what Is saturated fat, and why should you care?

Saturated fat is a type of fat found in meat, dairy, and some oils. It’s been linked to raising LDL (“bad”) cholesterol levels, which can increase the risk of heart disease.


While the science continues to evolve, one thing is clear: lower saturated fat levels are generally better for long-term health.


And guess what? Your choice of beef makes a difference.


grocery store beef: higher fat, lower transparency

Most beef in grocery stores comes from conventionally raised cattle—feedlot animals given high-calorie, grain-based diets to fatten up fast. They live sedentary lives, packed tightly in pens. The result? A fatter cow... with a higher percentage of saturated fat.


According to USDA averages:

  • Grocery store beef contains 5–8g of saturated fat per 100g of meat

  • Ground beef is often even higher

  • “Lean” is defined as ≤4.5g saturated fat per 100g, but good luck finding that at your local store


And that doesn’t even touch on added water, brine, or preservatives some processors use to get that “bright pink” grocery store look.
