Let’s say the quiet part out loud: We’re experimenting. Grain-Finished American Akaushi is a limited Special Release at Hi Bräu Beef. It’s not an “On Tap” breed. It’s not guaranteed year-round. It will sell out. It will disappear. It may come back. That’s the nature of doing craft beef the right way.

what is american akaushi?
American Akaushi is a 50/50 cross of Angus and Akaushi (Japanese Brown / Red Wagyu genetics).
What does that mean for your plate?
Heavy, visible intramuscular marbling
Big, steakhouse-level flavor
Exceptional tenderness
Large, impressive cuts
If you’re searching for premium grain-finished beef with serious marbling and depth, this one checks the box.
Our approach: pasture-raised + longer finish
Like every animal at Hi Bräu, these cattle are:
100% raised on pasture
Never confined to feedlots
Given a longer finishing period than our Angus and Premium Angus
Finished more in line with our Wagyu program (because the genetics can actually use that time to build marbling)
Translation:This is grain-finished pasture-raised beef, not commodity feedlot beef.
The grain is deliberate. The time is intentional. The goal is flavor—not shortcuts.
akaushi vs. american wagyu
If you’ve tried our American Wagyu, here’s the quick breakdown.
american wagyu
Choose Wagyu if you want:
Maximum luxury
Ultra-rich, buttery marbling
A steak that borders on decadent
Wagyu is our “go big or go home” lane.
grain-finished american akaushi (this release)
Choose Akaushi if you want:
High marbling with more balance
Tenderness without overwhelming richness
Classic steakhouse flavor with Wagyu influence
Quick gut check: If Wagyu sometimes feels like a lot, Akaushi might be your sweet spot.
where akaushi fits on price
In Hi Bräu terms:
Less expensive than Wagyu
More premium than most of our other breeds
If you’re looking for a luxury steak experience without full Wagyu pricing, this is a strong move.
