At the heart of what we do is the desire to try new things and the passion to experiment.


Our Special Release Varieties are a reflection of that: one time and limited releases of breed combinations, feed rations, time of aging, and anything else we think we can change to find new flavors and textures. All beef is not the same and this is our SR Varieties represent our ongoing journey to push the boundaries of beef.


Our On Tap Varieties are what we've established as our foundation combinations. We always have these growing on the farm and almost always have them in stock. They are high quality, high flavor, tender combinations

that are always enjoyed. They are dry aged for a minimum of two weeks, Live Aged for a minimum of 22 months, spend their entire lives on pasture, and are free from anything you don't want in your beef. The breeds are
