what Is premium angus grain?

Our Premium Angus Grain is the top tier of Angus beef we produce, reserved only for the most heavily marbled, high-grade steaks that come through our butcher. These cuts often qualify as Mid to High Prime, the kind of USDA beef grading that only about 2% of American beef ever reaches.


And here’s the kicker: it’s still 90% grass-fed.


understanding usda grading: why prime Is a big deal

Most grocery store Angus beef is USDA Choice, a solid, mid-range grade known for good marbling and tenderness. Roughly 74% of all U.S. beef is graded Choice. It’s great beef, and we raise a lot of it.


But Prime beef is the next level, higher marbling, better texture, and a richer, juicier bite. Only a small fraction of U.S. cattle qualify.


Even fewer ever reach Mid to High Prime, the kind of beef typically reserved for high-end restaurants and luxury hotels, not your local butcher counter.

Producing Prime-grade beef isn’t just luck, it’s the result of careful decisions across the board:

  • Genetic selection from our heritage Angus herd

  • Extended time on pasture and late harvest (no rushing to weight)

  • Grain supplement added only during finishing (about 10% of lifetime diet)

  • Locally milled feed designed to enhance marbling, not replace grass

  • Full-time access to pasture and forage, even during finishing


That means your steak gets the benefits of both grain and grass, a buttery finish and rich marbling, without losing the earthy, mineral-forward notes that define our farm.


grading by eye, not algorithm

Every Premium cut is individually hand-selected by our Craftmaster. If it doesn’t meet our visual standard for marbling, it gets labeled as our standard Angus Grain, which, for the record, still grades at High Choice to Low Prime.

why this beef Is so rare

Let’s be clear: most Prime beef in America is raised in industrial feedlots on 95%+ grain diets, with zero fresh grass. That’s not what we do.


Our Premium Angus Grain cattle are raised slowly, on pasture, with fresh forage and just enough grain to enhance their natural marbling. It’s rare to find high-Prime beef that’s also grass-fed, but that’s exactly what this is.


It’s a slower, more expensive way to raise beef. But it’s worth it.


what to expect when you cook It

  • Marbling: Thick, well-distributed intramuscular fat
