grass-finished south poll: our on tap variety

If you're looking for truly grass-finished beef, raised entirely on pasture, never fed grain, and bred for both flavor and sustainability, look no further than our South Poll cattle. You’ve probably never heard of them, and that’s okay. Most people haven’t. But around here, they’re one of our On Tap breeds for a reason: they’re efficient, nutrient-rich, climate-adapted, and downright delicious.

Let’s break down what makes South Poll beef such a smart (and flavorful) choice.

what Is a south poll cow?

South Poll is a composite breed, developed by combining genetics from Indian, African, Caribbean, and European cattle. It was designed specifically to thrive in the American South, and fun fact: it was developed by Teddy Gentry, the bassist from country music supergroup Alabama. (Weird flex, but it works.)

South Polls were built for:

  • Hot Southern climates (red hides = heat resilience)

  • Pest resistance (dense hair follicles)

  • Efficient reproduction

  • Thriving on grass alone, no grain required

why 100% grass-fed & finished beef matters

Most beef labeled “grass-fed” still ends up in a feedlot. Grain-finishing is standard, even among smaller farms. But South Polls were bred to finish beautifully on grass only, which is almost unheard of.

That means:

  • No feedlot.

  • No grain supplements.

  • Just native grasses, legumes, and forbs from our pastures.

These cattle stay lean and healthy on a natural diet, leading to a more robust, earthy flavor and cleaner nutritional profile. It's the real deal, and one of the few examples of 100% grass-fed and grass-finished beef available in the U.S.

a better choice for the land

South Polls are also our most ecologically efficient breed. Why?

  • They need less pasture per cow

  • They graze more quickly, regenerating land as they move

  • They don’t require imported feed or grain

If you care about regenerative agriculture and minimizing your footprint, this is the beef that aligns with your values.

what does south poll beef taste like?

South Poll beef is:

  • Bold but balanced—rich in flavor without being gamey

  • Tender by design—these cattle were bred for a better bite

  • Marbled just enough—similar to mid-to-high Choice cuts

  • Reminiscent of old-school beef—like what your grandparents may have raised

The flavor comes from the quality of the forage and the slower, pasture-based growth. Customers often say it tastes like beef used to taste, before shortcuts became the norm.

Off-the-charts health benefits

When it comes to nutritional value, South Poll is right up there with our grass-finished Wagyu. It’s:

  • High in omega-3 fatty acids

  • Low in saturated fat

  • Packed with healthy unsaturated fats

  • Featuring omega-6 to omega-3 ratios as low as 1:1 (same as sardines)

This is some of the most nutrient-dense beef you can buy, period.

always On tap, except in winter

We proudly consider South Poll one of our two “On Tap” breeds, our most reliable, consistent offerings. But here’s the catch: high-quality grass doesn’t grow year-round in our region. So, while we try to keep South Poll in stock, it often runs low in winter and returns in full force in late spring.

Is south poll right for you?

If you’re seeking beef that’s:

  • 100% grass-fed and finished

  • Better for the planet

  • Nutrient-dense and omega-rich

  • Full of traditional, pasture-raised flavor

...then South Poll is your go-to.
