"Thor's Hammer" Whole Beef Shank
It won’t summon lightning, but it will stop a party in its tracks. The Thor’s Hammer (aka Volcano Cut Shank) is a showstopping cut from the upper leg, packed with collagen and bold beef flavor.
It’s not beginner-friendly, but give it a long smoke or braise and you’ll be rewarded with melt-in-your-mouth meat worthy of the gods. Never in stores, common at Hi Bräu, because we do things differently around here.
Each ANG Hammer weighs 4–6 lbs, while each Wagyu and Akaushi Hammer weighs 5-7 lbs (larger breeds of cattle). They are dry-aged for two weeks, flash-frozen, and individually packaged. Due to the bone, packaging may contain air or ice, but it won’t affect quality.
