Our Stew Beef is made from trimmed tips and odds of premium cuts, like Tenderloin, Flat Iron, and Tri Tip. It's perfectly good meat that just didn’t fit the mold. Instead of grinding it, we cube it into ~1" pieces and save it for something better.

 

Great in stews, sure... but also ideal for quick, hearty meals when you need high-quality beef, fast, and already cut up.

 

Dry-aged for two weeks, hand-cut, vacuum-sealed, flash-frozen, and packed in convenient 1 lb sizes. Only available in our On-tap varieties (ANG Grain or SP Grass) or our American Wagyu (when available and you want to level up).

 

How is this different from our Beef Cubes? Cubes are cut pretty uniformly and come exclusively from the Round muscle, making them lean and uniform with a firm bite. Stew Beef comes from any muscle, is less uniform in shape, and usually fattier, better marbled, and more tender.
