These cuts are meant to be cooked for long periods of time with low heat to break down hardy, flavorful muscle fibers for unrivaled levels of juicy deliciousness.

All cuts are dry aged for a minimum of two weeks, vacuum sealed, and flash frozen to preserve freshness.
