Dino Ribs
No actual dinosaurs were harmed, but our Dino Ribs are cut big in their honor. Each rib plate consists of 3-4 meaty, well-marbled ribs, usually weighing 4-8 lbs.
Perfect for a long, slow cook, these ribs render down into rich, juicy, fall-off-the-bone flavor bombs. More forgiving than brisket, but just as impressive. Fair warning: they’re fatty, as ribs should be. If that’s not your thing, check out Tri-Tip instead.
Dry-aged for two weeks, packaged one or two per pack, flash-frozen for freshness. Because of the bone, the vacuum seal may be loose so some air or ice is normal.
