Cut from the cheek of the hog, the Whole Pork Jowl is a richly marbled, flavor-packed cut that’s prized in traditional Southern cooking. Slice it into your own jowl bacon, slow-cook it for melt-in-your-mouth texture, or cure it into guanciale like the Italians do. However you use it, this is pasture-raised pork at its most indulgent.
