Also called the Tenderloin or the Filet, the Filet Mignon Steak is considered to be the most tender cut of beef. It has light, delicate marbling and mild flavor. It's the perfect steak for a date night or celebration. Don't worry about a steak knife; you won't need it with this cut.


These particular South Poll steers finished wonderfully on our Spring grass, and the beef turned out to be exceptional. Expect an estimated High Choice and Low Prime marbling level (based on Ribeye grading), which is virtually unheard of on 100% grass fed and finished animals, along with a tender bite and robust flavor. It has a beautiful, yellow tinted fat due to the high levels of beta carotene.


After two weeks minimum dry aging, these are vacuum sealed before flash freezing for optimal freshness. They are packaged two per pack.
