On the First Day of Christmas, we made Chuck Eye Steaks 25% off.
Though it's often called the poor man's Ribeye, this cut can make anybody feel like a million bucks. It comes from the Chuck primal of the cow (shoulder area), but is cut from the muscles adjacent to the Ribeye. In fact, it even includes some of the same individual muscles. The result is a tender, flavorful, marbled cut, just like a ribeye, but with a better price point. Don't worry about saving this one for special occasions, even though it will taste like you should.

On the Second Day of Christmas, we took 20% off Short Ribs.
Beef Short Ribs are meaty, well marbled, chock full of flavor, and hard to stop eating. A long, low, slow cook renders the extra fat and connective tissue to provide a succulent feast with top notch flavor. This is our most requested cut from slow cooker aficionados.

On the Third Day of Christmas, we made Ground Beef 35% off.
Our Ground Beef is made with our premium beef, with limited added fat, always from the same animal. You'll never have multiple animals' lean meat mixed with fat from other animals from a different country (if you buy grocery store meat, you've absolutely eaten this. We're sorry). Our Ground Beef is in the neighborhood of 85% lean to 15% fat, but it's never exact since the butcher makes the call on the best ratio to enhance flavor and texture based off of each animal. What we can tell you is that you won't be dumping off tons of fat from the bottom of the pan and you'll love the flavor. On the Fourth Day of Christmas, we took 25% off Denver Steaks.
The Denver Steak is a hard to find cut from the chuck primal of the cow. Richly marbled and tender, we cut ours on the smaller side to give you a great option for one or two people. Make sure to slice it across the grain to maximize tenderness (a good rule of thumb with all steaks). These are cut from 1" to 1.25" to accommodate a very quick sear. Sous vide and then a char in a cast iron pan is also a great way to enjoy these steaks.

It wasn't long ago that this was a cut that truly earned the "Butcher's Reserve" name...a cut that was delicious, but only known to seasoned butchers. Instead of grinding it into ground beef or trying to explain what it was to customers, they would simply take it home. These days, it's much more popular, and for good reason. The Flat Iron is considered the second most tender cut on the cow, right behind the filet (tenderloin). It's larger size and generous marbling, as well as lower price point, help it give the filet, and any other high end steak, a run for its money in quality. Plus it has a cool name.

Beef Bacon is cut from the navel muscles in the cow. It has generous fat and flavor, and requires a slow cook to enhance tenderness. Our Sliced Beef Bacon is dry aged for a minimum of two weeks, sliced into 1/4" strips, vacuum sealed in one pound packages, and flash frozen to preserve optimum freshness. It comes uncured and raw, ready for at home salting, curing, or smoking. Our Block Beef Bacon is not sliced, but rather left in blocks just as it comes from the animal. It's great for smoking and curing yourself for the ultimate custom experience. It comes uncured and raw and is cut into rectangular blocks. Sometimes you just need to show somebody that you're serious about your steak. Enter: the Monster Ribeye. This Bone In Ribeye is cut only from our current Special Release, which is from 40 Month Live Aged Angus steers. The extra growth period gave the steers time to develop a huge, tender, marbled, flavorful ribeye that we can assure you is unique in the beef world. We cut the bone extra long, which makes it similar to a tomahawk, except with more meat. In addition, we leave a big section of the spinalis dorsi muscle attached. Finally, the fat cap is left on. Our Tri-Tip Roast is one of our rarer roasts, and is well marbled, tender, and full of flavor, making it one of the best possible choices for smoking. Our Chuck Roast has the highest fat and marbling content of the roasts, and is great in the slow cooker, crock pot, or even the smoker. Our Sirloin Tip Roast is the leanest of our roasts, and is best served braised, slow cooked, or roasted.
