On the First Day of Christmas... We Had a Sale!

We couldn't let the holidays pass without spreading cheer and having a sale. All discounts will be valid for the entire twelve days of the sale, so there's no worries about separate carts - fill your cart and stock up on your favorite beef!

Learn more about each of our sale cuts and plan your purchase. Our sale will run from December 8-19th, so don't miss out! If you order between December 8-12th, your order will be shipped on December 13th. If you order between December 13-19th, your order will be shipped on December 20th - just in time for Christmas.

On the First Day of Christmas, we made Chuck Eye Steaks 25% off.

Though it's often called the poor man's Ribeye, this cut can make anybody feel like a million bucks. It comes from the Chuck primal of the cow (shoulder area), but is cut from the muscles adjacent to the Ribeye. In fact, it even includes some of the same individual muscles. The result is a tender, flavorful, marbled cut, just like a ribeye, but with a better price point. Don't worry about saving this one for special occasions, even though it will taste like you should.

On the Second Day of Christmas, we took 20% off Short Ribs.

Beef Short Ribs are meaty, well marbled, chock full of flavor, and hard to stop eating. A long, low, slow cook renders the extra fat and connective tissue to provide a succulent feast with top notch flavor. This is our most requested cut from slow cooker aficionados.

We cut our Short Ribs across the bone in "plate" sections containing about four rib bones, the fat cap, and plenty of meat. To shop, click here.

On the Third Day of Christmas, we made Ground Beef 35% off.

Our Ground Beef is made with our premium beef, with limited added fat, always from the same animal. You'll never have multiple animals' lean meat mixed with fat from other animals from a different country (if you buy grocery store meat, you've absolutely eaten this. We're sorry). Our Ground Beef is in the neighborhood of 85% lean to 15% fat, but it's never exact since the butcher makes the call on the best ratio to enhance flavor and texture based off of each animal. What we can tell you is that you won't be dumping off tons of fat from the bottom of the pan and you'll love the flavor. All of our ground beef comes in one pound vacuum sealed packs, which are flash frozen for optimal freshness. To shop, click here.

On the Fourth Day of Christmas, we took 25% off Denver Steaks.

The Denver Steak is a hard to find cut from the chuck primal of the cow. Richly marbled and tender, we cut ours on the smaller side to give you a great option for one or two people. Make sure to slice it across the grain to maximize tenderness (a good rule of thumb with all steaks). These are cut from 1" to 1.25" to accommodate a very quick sear. Sous vide and then a char in a cast iron pan is also a great way to enjoy these steaks.

On the Fifth Day of Christmas, we made Flat Iron Steaks 25% off.

It wasn't long ago that this was a cut that truly earned the "Butcher's Reserve" name...a cut that was delicious, but only known to seasoned butchers. Instead of grinding it into ground beef or trying to explain what it was to customers, they would simply take it home. These days, it's much more popular, and for good reason. The Flat Iron is considered the second most tender cut on the cow, right behind the filet (tenderloin). It's larger size and generous marbling, as well as lower price point, help it give the filet, and any other high end steak, a run for its money in quality. Plus it has a cool name.

On the Sixth Day of Christmas, we took 25% off Beef Bacon.

Beef Bacon is cut from the navel muscles in the cow. It has generous fat and flavor, and requires a slow cook to enhance tenderness. Our Sliced Beef Bacon is dry aged for a minimum of two weeks, sliced into 1/4" strips, vacuum sealed in one pound packages, and flash frozen to preserve optimum freshness. It comes uncured and raw, ready for at home salting, curing, or smoking. Our Block Beef Bacon is not sliced, but rather left in blocks just as it comes from the animal. It's great for smoking and curing yourself for the ultimate custom experience. It comes uncured and raw and is cut into rectangular blocks. The small blocks are approximately 8 inches long, 6 inches wide, and 1.5 inches thick. Small blocks weigh at least two pounds and large blocks weigh at least three pounds. To shop, click here.

On the Seventh Day of Christmas, we made Monster Ribeyes 15% off.

Sometimes you just need to show somebody that you're serious about your steak. Enter: the Monster Ribeye. This Bone In Ribeye is cut only from our current Special Release, which is from 40 Month Live Aged Angus steers. The extra growth period gave the steers time to develop a huge, tender, marbled, flavorful ribeye that we can assure you is unique in the beef world. We cut the bone extra long, which makes it similar to a tomahawk, except with more meat. In addition, we leave a big section of the spinalis dorsi muscle attached. Finally, the fat cap is left on. You'll be amazed when you see this hunk of meat! To shop, click here.

On the Eighth Day of Christmas, we took 15% off Beef Brisket.

Brisket is actually known for being possibly the most flavorful cut of meat on a cow. It requires a low and slow cook to break down the tough connective tissues that ultimately give it unparalleled flavor. For those willing to undertake the journey, the rewards are worth the wait.

Our brisket is cut into flats and points, rather than kept whole and are dry aged for a minimum of two weeks, individually packaged, vacuum sealed, and flash frozen for optimal freshness.

On the Ninth Day of Christmas, we made Canoe Bones 20% off.

Beef marrow is a a beefy, flavorful, rich delicacy and is becoming quite popular in the USA. It has a silky texture and many health benefits due to its vitamin, mineral, and collagen content. There's a reason many high end steakhouses serve this as an appetizer. There's lots of ways to prepare bone marrow, including adding them to soups, stews, and stocks for a huge bump in flavor and nutrition. To shop, click here.

On the Tenth Day of Christmas, we took 25% off all Organs.

We have a wide selection of organs available that reflect the quality of our Hi Bräu beef. Our Beef Kidneys are left whole, usually weight between one to two pounds, and are lean, flavorful, and high in vitamins and minerals. Our Beef Tongue is tender and extremely well marbled, coming whole and individually packaged. Our Beef Heart is happens to have a similar flavor and texture to steak, but at a fraction of the cost, and come either sliced or whole. Our Beef Liver is a nutrient dense, mineral powerhouse that is lower in calories and fat than muscle meats and is sold sliced for easy cooking.

All of our organs are very limited in stock, so make sure to snag them early!

On the Eleventh Day of Christmas, we made Beef Shank 25% off.

Beef Shank, which is also referred to as Osso Bucco after the popular Italian dish, is a tough, but flavorful cut of beef with a great price. This is a great example of a muscle that's frequently used by the animal developing a robust, beefy flavor.

Though popular in many other cultures, Americans haven't had much exposure to Shank. Those willing to experiment will be rewarded with a delicious alternative to more expensive cuts. Great in soups, stews, braised, or in Osso Bucco, it's a versatile cut that lends itself well to many types of slow cooking. To shop, click here.

On the Twelfth Day of Christmas, we took 20% off all Roasts.

Our Tri-Tip Roast is one of our rarer roasts, and is well marbled, tender, and full of flavor, making it one of the best possible choices for smoking. Our Chuck Roast has the highest fat and marbling content of the roasts, and is great in the slow cooker, crock pot, or even the smoker. Our Sirloin Tip Roast is the leanest of our roasts, and is best served braised, slow cooked, or roasted. Our Shoulder Roast has more fat and marbling than a Sirloin Tip, but less than a Chuck, making it the best of both worlds.

Shop all of these deals from December 8-19th and get ready for your first crafted beef experience.
