HB 101: How to Cook the Perfect Steak

Follow these simple steps to cook the most mouthwatering steak - guaranteed.



Step 1: Choose the right steak

We always say that a great steak starts with a great steak. That means that even the best chefs can’t make a bad steak good. Hi Brau Beef offers a range of premium, family farm raised steaks. 

Pro tip: There are plenty of “Butcher’s Cut” steaks that will challenge the best Ribeye but for less money, making this a gift that will fit any budget. 


Step 2: Remove the steak from the refrigerator

About an hour before cooking, remove the steak from the refrigerator and let it come to room temperature. As it warms, blot any steak juice off with paper towels to keep the surface dry. This is key for a great crust.



Step 3: Season the steak

Season the steak generously with kosher salt and coarse ground pepper on both sides. We usually don’t recommend anything else. It would be a crime to hide the flavors of a great steak! 


Step 4: Preheat your grill or pan

If using a grill, preheat it to high heat. If using a pan, heat it over high heat on the stove. You want the cooking surface to be hot before adding the steak. It’s difficult to get it too hot, but we like ours at least 500 degrees.



Step 5: Add the steak to the cooking surface

If using a grill, add the steak to the hot grill grates. If using a pan, add a little bit of oil to the hot pan and add the steak. Cook the steak for 3-4 minutes on one side until a crust forms. You can rotate the steak after a couple of minutes to get grill marks that make you look like a steak wizard.


Step 6: Flip the steak

Use tongs to flip the steak over and cook for an additional 3-4 minutes on the other side. The exact cooking time will depend on the thickness of the steak and how well done you like it. For medium-rare, which we recommend, aim for an internal temperature of 130-135°F.



Step 7: Rest the steak

Remove the steak from the grill or pan and let it rest on a cutting board for 5-10 minutes. This allows the juices to redistribute and makes for a juicier steak.


Step 8: Slice and serve

Use a sharp knife to slice the steak against the grain into thin slices. Serve immediately with your favorite sides, such as roasted vegetables or mashed potatoes.
