Where else can you get a flight of craft beef? Nowhere. This is why we do what we do and it’s our signature offering. Whenever we have enough variety of cattle on the farm, we offer limited release Crafted Beef Flights. It's possibly the only opportunity to compare the flavors and textures of different kinds of beef in one package. All of these beef varieties are raised on our 3rd generation regenerative farm, a rarity in the beef world...but an opportunity for you.  

 

This limited release flight contains 3 crafted beef varieties:

• "Aged on the Hoof ", Grass-Fed, and Grass-Finished Angus: 100% Angus that has been matured for a minimum of 40 months on pasture (over 20 months longer than commercial beef). Finished on lush Spring pastures containing Ryegrass, Crimson Clover, and Forbs. Expect a complex texture with some of the most robust, beefy flavors you can find. 

• Grass-Fed and Grass-Finished South Poll: South Poll is a rare breed with roots tracing back to Scotland, India, and the Caribbean. Bred to finish specifically on grass, it offers an unparalleled grass-finished experience. Tender and more mellow than our Aged on the Hoof beef. Finished on Ryegrass, Crimson Clover, and Forbs after 20+ months on fescue.

• Grass-Fed and Grain-Finished Angus Crossbreed: We take our Angus-influenced cattle and finish them on a locally mixed, custom feed blend. The cows are offered this blend as a supplement to their primarily grass diet. No commercial feedlots here; these cattle have constant access to fresh pasture and shade trees. This offers a buttery, mellow flavor and solid marbling that surpasses anything you can buy in the store.
